WHITE CUT CHICKEN


'White cut chicken' or 'white slice chicken' is a variety of ''siu mei'', or roasted meat dishes, within Cantonese cuisine. Unlike the other roasted meat in the ''siu mei'' category, this dish is steam roasted to create the light color texture white meat appearance. The chicken is generally tender.
The dish is found in Southern China regions and most Chinatown restaurants overseas. In all cases it is served with a side order of heavily salted mashed ginger, called ''goeng1 jung4'' () or ''goeng1 cung1 jau4'' (). The dish relies solely on the ginger for its flavoring.
