This delicious vegan stir-fry takes about 40 minutes from "I'm hungry" to "Let's eat"!! Faster than pizza delivery, and no side-of-cruelty! We call it "Mel & Josh's Buddhist Delight"!! (Prep time is given using two people) Here is the stir-fry sauce: http://www.kikkomanusa.com/_pages/consumer/products/takumi.asp?loc=101&subsection=products&subsection2=takumi This is another (cheaper) stir fry sauce that's WONDERFUL: http://www.worldfood.com/asian/stir_fry.asp Here is the recipe: First things first, start some rice in your rice cooker, or in a saucepan according to package directions (1 1/2 cups should be enough for 2). Drain the tofu according to the directions on the package (this takes about 30 minutes). You can use the time in between to start chopping your veggies. There are two parts to this recipe, the vegetables & the tofu. In this version the tofu is fried in oil, though the tofu can simply be cubed & added to the stir-fry* without deep-frying, if desired. (See below for non-fried tofu) Fried Tofu: -1/4 lb extra firm tofu -store-bought tempura mix or google a recipe to make your own! (make sure it doesn't contain WHEY!) -2cups oil Cube the tofu to your desired size (about 3/4") Combine the tempura batter with water & mix to a cake-batter consistency. I find it helpful to mix the batter in a teacup rather than a bowl. A smaller amount of batter is allowed to pool at the bottom so there's less waste. Plop the tofu cubes into the batter, and make sure they are coated on all sides. Retrieve the cubes from the batter, allow the excess batter to drop off and drop them into pre-heated oil. (You can test whether your oil is heated by dropping a small droplet of batter into the oil first. If it sinks & immediately floats up, you're on track. If it sinks & stays there for more than 5 seconds, you're too cold. If it vigorously fries without dropping to past the surface, you're too hot. Adjust your heat accordingly) Let them fry until golden brown. They're attracted to each other in the oil, so make sure you keep them from fusing together. If your oil is too hot, they will burn on the outermost layer of the batter, while everything inside stays mush. Cut open your first cube & check it to see how it looks! Personally I prepare about 8 cubes per person and I fry them never more than 4 at a time, so that I can monitor each cube. After 60 to 90 seconds (depending on size), retrieve the cubes of tofu and lay them on a paper towel to drain. Set aside. ______________________________________ Vegetable Stir Fry: -1tsp of sesame oil -1tbsp of olive oil -assorted vegetables (see classification below - if you're adding a different veggie to this mix & you're not sure how to classify it, please leave a comment & we'll try to help!) Hard Veggies: -broccoli florets -green beans -snow peas Medium Veggies: -bell peppers (multi-color) -red onion Soft Veggies: -mushrooms ("Button", "Baby Bella" or Shitake) -water chestnuts (canned, rinsed) -baby corns (canned, rinsed) Heat the oil in a wok or deep frying pan. Add your veggies from hard to soft, about 1 - 2 minutes apart. (Harder veggies take longest to cook, so keep this in mind as you add veggies. You want the hardest ones to get the most time in the wok! You may want to add about 3-4tbsp water to your hard veggies, cover & allow them to steam for 2 minutes. The heat will evaporate the water - no need to remove it.) Keep the veggies moving with a wooden spoon at all times (except the covered steaming process above). *If you're not frying the tofu separately, it will be the absolute last thing you add AFTER your soft veggies.* When the veggies are tender (but not too tender, don't cook out all the nutrients!), add your Kikkoman or other stir-fry sauce to taste. (About 3 or 4 tbsp) Toss the veggies in the sauce till all are coated (not more than 30 seconds). Not a good idea to put the fried tofu into the stir-fry, it will lose its crispy exterior. We'll tell you how to add it below. Serve over a bed of rice & place your fried tofu on top. Extra stir-fry sauce and/or soy sauce can be added per your preference.
